The Ligurian "pan bagnau": an alternative sandwich that gives new life to stale bread.

FOR 4 PEOPLE

Ingredients

3 ripe tomatoes

12 slices of stale homemade bread

10 fresh basil leaves

a handful of fresh oregano

1 clove of Vessalico garlic

2 desalted anchovies

a little tuna bottarga

extra virgin Taggiasca olive oil

salt


Directions

Peel the tomatoes and dice them.

Arrange the slices of bread on the bottom of a container, season the tomatoes with the anchovies, the crushed garlic, the western Liguria extra virgin olive oil and salt to taste.

Place over the slices of bread spoonfuls of the mixture, arrange some chopped basil leaves, cover with another layer of bread, then tomatoes again and so on until you have finished the ingredients leaving the tomatoes as the top layer.

Grate a veil of tuna bottarga on top of it.

Leave to rest for at least 2 hours and then serve.
