Stuffed Sardines

The recipe for stuffed sardines ("sardene cine") fried in hot oil: crispy and gold.

FOR 4 PEOPLE

You will need 800 grams of sardines: choose them not very fat and with a lively eye (an indicator of freshness).

Ingredients for the stuffing

1 bunch of raw chard (chopped and covered with salt for an hour and well squeezed)

2 tablespoons of grated Parmesan cheese

2 eggs

3 cloves of garlic

1 bunch of parsley

pepper and salt to taste

bread dipped in milk and well squeezed

2 tablespoons of Taggiasca olive oil


Directions

Open the sardines and remove the entrails, the head and the central bone, leaving the tail.

Wash them with water, leave them to drain, dry them with a cloth.

Prepare the stuffing: knead the ingredients by adding breadcrumbs to the right consistency.

Let it sit for 5/8 minutes.

Place a spoonful of stuffing on each fish, well spread with the back down, pressing them with your fingers.

Turn them over and fry them in olive oil.
