Onion Croquettes

Onion croquettes served hot are a delicious snack.

FOR 4 PEOPLE

Ingredients

4 eggs

4 tablespoons of flour

a bunch of fresh spring onions

a sprig of marjoram

little milk

salt and pepper to taste

fry oil


Directions

Beat the egg yolks in a bowl with the flour and a little milk, leave to rest.

Finely slice the onions, salt them and leave them to rest.

Whisk the egg whites until stiff, add them to the egg yolks and the flour, include the spring onions, the chopped marjoram, salt and pepper.

Fry plenty of oil and pour in it spoonfuls of the mixture.

When they swell turn them on the other side with a slotted spoon.

Drain them. Place them on absorbent paper.
