Courgette flowers become delicious stuffed and fried morsels ("sciue cine").
FOR 4 PEOPLE
Ingredients
16 courgette (zucchini) flowers
3 eggs
3 tablespoons of flour
1 pound of fontina cheese
4 slices of cooked ham
2 sprigs of marjoram
Directions
Beat the eggs with the flour and the chopped marjoram and refrigerate for 1 hour.
Clean the flowers from the pistils and stuff them with a slice of fontina cheese and a small piece of ham; fold the petals to seal them.
Put the frying pan on the stove.
Add the salt and pepper to the batter, dip the flowers and then transfer them, when the oil is at frying temperature, to the pan.
Fry on both sides and serve hot.
