The traditional farinata made with chickpea flour: simple and delicious.
FOR 4 PEOPLE
Ingredients
1 liter of water
300 grams chickpea flour
5/6 fresh spring onions
salt and oil to taste
Directions
Put 1 liter of water in a bowl, pour the chickpea flour and let it rest.
Thinly slice the spring onions, salt them and let them rest.
After at least 2 hours, put in the oven the onions in a pan with a little oil, let them sweat, add the soaked chickpea flour and cook for about 20 minutes at 220° C.
*There are other versions with thinly cut chard, put to rest with salt for at least 2 hours.
As an alternative, always with this mixture, form some pancakes and fry them in hot oil.
