La ricetta della Buridda, lo stoccafisso in umido del Ponente Ligure.
FOR 4 PEOPLE
Ingredients
800 g wet and clean stockfish
5 large potatoes
a bunch of parsley
2 cloves of garlic
2 large tomatoes
2 squeezed lemons
one glass extra virgin olive oil from western Liguria
salt
Directions
Boil the stockfish and the potatoes.
Finely chop garlic and parsley.
Peel the tomatoes and chop them.
Squeeze the lemons, emulsify everything with oil and season with salt.
Use the sauce to season fish and boiled potatoes.
