A sincere dish with strong flavors, typical of the rural tradition.
Ingredients
half goat
1 kg of potatoes
½ kg of beans (soaked for about 12 hours)
onion, celery, carrot
a clove of garlic
2 laurel leaves
rosemary
thyme
extra virgin olive oil from western Liguria
white wine
Directions
Brown the goat in a crock pot to sauté it and take it off the pan.
Finely chop the onion, a crushed clove of garlic, celery, carrots, rosemary and thyme: sauté over low heat.
Then add the laurel, the goat and white wine: simmer (very slowly) for at least 5 hours.
Add the previously soaked beans: cook for about 1 hour then add the potatoes.
Continue cooking adding salt and, if necessary, a little meat broth.
After about 1 hour, the dish will be ready to be served.
